Continental- Vegetables- Tomatoes

                                     Stuffed Tomatoes

Ingredients: 7-8 tomatoes (small size), 2 onion, 1 capsicum, 100gm paneer, 1 tbsp raisins, 1 green chilli, 1 tsp red chilli, 1 tsp dania powder, 1 tsp amchur powder, 1 tsp tomato ketchup & salt

Method: Cut the tomatoes from top. Remove pulp with the knife and keep it inverted for 2 min. Take a bowl  and add 1 finely chopped onion, 1 finely chopped capsicum, mashed paneer, kishmish & all dry masalas. Mix all ingredients well and fill it into tomatoes with spoon.
                 Make the paste of 1 onion & 1 tomato. Heat oil in a pan and add paste in it and saute for 5 to 6 min. Add salt red
chilli and tomato ketchup and a little water and saute for 1 min. Take out this masala in a microwave bowl and keep the stuffed tomatoes in it and micro it for 2 min  until tomatoes  are tender.

                          Stuffed Tomatoes are ready.

Continental- snacks- Cheese Vegetable sandwich

                        Cheese Vegetable sandwich

Ingredients: 1 bread large in size, 1 onion (chopped), 1 tomato (chopped), 1 capsicum (chopped), 1/2 cup  sweetcorn, 1/4 cup cheese (grated), 1 green chilli, 1 tsp oregano, 2 tbsp butter, 2 tbsp tomato ketchup & salt.

Method: Take a bowl add all the chopped vegetables, chopped green chili, cheese, sweetcorn, oregano & 1 tsp tomato ketchup. Mix all well with a spoon. Cut 8 bread slices in round shape. Cut half of these in a circle shape. Apply butter & tomato ketchup on round slice and place the circle one on it. Add the vegetable mixture in it. Keep it in the sandwich grill or OTG.             The crispy healthy sandwich is ready. 


        

Indian- Vegetable- Grapes (Tomatoes) Chutney

                           Khatti Mithi Grapes Vegetable

Ingredients: 1 large bowl of Grapes, 9-10 dates, 1 tsp rai, a few curry leaves, 1 tbsp ginger paste, 2 green chillies (chopped), salt, 1/2 tsp red chillies, 1 tsp lemon juice & 1 tbsp sugar.

Method: Heat oil in a pan and add rai when it crackle add ginger paste & curry leaves. Saute for 1 min.  Add grapes (cut in half) add salt, sugar, red chillies & 1 cup of water. Cover the pan & Bring to boil and let it simmer for 10 min. Add dates (cut in strips). again cover and let it cook for 5 min. Add  lemon juice (optional).
                   Khatti Mithi sabji is ready. Can be have with chapatti or rice.
             (Replace grapes with tomatoes for Tomatoes chutney)






Indian- Vegetable- Babycorn & Capsicum masala

                             Babycorn & Capsicum masala

Ingredients: Babycorn 200gm (12 pieces)(cut 1" ), 1 capsicum (cut small strips), 1 bayleaf, 2 green chillies, 1 tomato (chopped), 1 onion (chopped), 1 tsp ginger paste, 1 tsp garlic paste, 1 tbsp coriander powder, 1 tsp jeera powder, 1 tsp turmeric, salt, garam masala 1tsp & fresh cream 2 tbsp.

Method: Heat oil in a pan add bay leaf, onion, saute till brown. Add ginger garlic paste green chillies saute for 1 min. Add coriander powder, cumin powder, haldi & chopped tomatoes and saute for 2 min. Add capsicum and babycorn 1" mix well and cook for 2-3 min. Add fresh cream and cook for 1 min. and add garam masala. Babycorn masala is ready.


Indian- Chutney and Pickles- Apple Jam

                             Apple Jam

Ingredients: 2 Apples, 4-5 tbsp sugar, 2 tbsp lemon juice & a 1" cinnamon stick
Method: Chop the apples in a very small pieces.Take a pan and add apple pieces cinnamon stick and add 1/4 cup water cover with lid. Keep it on low flame for 10 min. Remove cinnamon stick & mash the apple and add sugar add a pinch of food colour (optional). Saute it on high flame till u get thick consistency add lemon juice and mix it properly.
           Apple Jam is ready.

Chinese- Starter- Vegetable

                                       Gobhi Manchurian

Ingredients: Cauliflower 1 flower (medium size), 4 tbsp maida, 4 tbsp cornflour, 1 onion (chopped), 1 capsicum ( chopped), garlic paste 1 tsp, ginger paste 1 tsp, soy sauce 2 tbsp, Tomato ketchup 3 tbsp,   salt, red chilli, vinegar 1tsp, oil for deep frying, spring onion chopped for garnishing.

Method : Keep the cauliflower florets in boiling salted water for 10 min.. Make a batter of maida and  cornflour, ginger paste, garlic paste, a pinch of food colour, salt & chilli & water. Heat oil and  deep  fry gobhi dipped in the batter.                                                            In another pan heat 2 tbsp oil add giner garlic paste saute add chopped onion & capsicum  again saute  for 1 min. Add soy sauce, tomato ketchup, chilli sauce(optional), salt, 1/4 cup water and  vinegar and add fried gobhi in it and mix well. Garnish it with chopped spring onions. 

            Gobhi Manchurian is ready.


Indian- Bread- Methi Parantha

                 Methi Parantha

Ingredients: 3 cups wheat flour, 1 cup methi leaves(chopped), 2 green chillies(chopped), 1 cup cooked daal,  1 tbsp oil and salt

Method: Knead all the above ingredients in warm water to make a soft dough. Make small balls & roll out the parantha. Fry it with oil on tava. Khasta parantha is ready.

                          Sweet Rice (Meethe Chawal)

Ingredients: 1 cup rice, 1 cup Jaggery (gud), 2-3 laung, 1" piece of cinnamon (dalchini), 2 tbsp cashew nuts,  2 tbsp raisins

Method: Boil 1 cup rice with 2 cups of water and add laung and dalchini in a pan and cover it with lid.  Transfer cooked rice in a micro proof bowl. Mix jaggery with the water and add in the bowl along  with raisins and  cashews Mix it nicely. Keep in the microwave for 2-3 min. and Sweet rice is ready.

Indian- Vegetable- Gobhi bhurji

                                   Gobhi bhurji

Ingredients: 1 small cauliflower, 1/2 cup matar, 1 tbsp ginger paste, 1 green chilli, salt, 1tsp haldi,
                  coriander leaves, 1 tsp garam masala.
Method: Grate the gobhi. In a pan heat oil add ginger paste saute for a minute. Add haldi, chopped green chilli,  gobhi, matar and salt and 2tbsp water and mix well. Cover the pan with the lid and cook for  8-9 min on low flame. Open the lid and check whether it's cooked, if not then cook it for another 1-2 min. Add garam masala and chopped coriander leaves and mix well.
                   Gobhi bhurji is ready.

Indian-Dessert- Chocolate with nuts

                                     Chocolate with nuts
Ingredients: 1 small bowl almonds, 1 small bowl kaju, 2-3 tbsp nutella, 1/2 cup milk,  1 tbsp cocoa powder,  2 tbsp sugar.

Method: In a pan add milk, sugar and cocoa powder and boil it for 3-4 min till u get thick consistency.
     Roast almonds and kaju separately in a pan. Crush dry fruit in a mixie to small chunks.
     In a bowl mix nutella with almond chunks and make small balls. Similarly mix kaju chunks with nutella and  make small balls. Keep these balls in the fridge for 20 min. Coat these balls with cocoa mix and  again keep  in the fridge. Coat the balls again after 15 min. Keep the chocolates in fridge for 20 min. 
     Enjoy the Delicious chocolates. 

Italian-Snacks-Cheese Garlic Bread

                 Cheese Garlic Bread

Ingredients: 1-2 tbsp butter, 10 cloves of garlic, coriander leaves, mixed italian herbs, Amul mozzarella cheese,  olives, 2 slices of bread (large bread).


Method: Cut round pieces of bread. Mix butter, garlic, coriander leaves and herbs in the mixie. Apply it on the bread slices and keep it in the sandwitch maker.(OTG can also be used) On top of the bread sprinkle grated cheese and put one olive on it and micowave it for 1 min.
          The yummy bread is ready to enjoy with tomato ketchup.
